Chocolate Sea Salt Tarts

Makes 18 Tarts
  • 1 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1 tbsp espresso powder
  • 4oz unsalted butter, room temperature
  • 1 egg yolk
  • 1 tbsp cream
  • 1/2 cup cream
  • 4oz bittersweet chocolate
  • 1/4 tsp flaky sea salt
Egg Wash:
  • 1 egg yolk

  1. Using a flat beater, mix butter, sugar and egg yolk until combined.
  2. Sift flour, cocoa and espresso powder together. Add to butter mixture and blend until smooth. Scrape down sides and add 1 tbsp cream. Mix.
  3. Wrap the dough and chill for at least 30 minutes.
  4. On a lightly floured surface, roll out dough to 1/8" thickness. Cut 18 circles out of dough.
  5. Spray your tart shells with vegetable oil. Gently place each piece of dough  into a shell, using a fork to secure it to the bottom of the shell.
  6. Beat the egg yolk with a fork to make an egg wash. Brush the egg wash over the dough.
  7. Bake for 12 - 14 minutes at 350 degrees F. When tarts cool down pop them out of their shells.
  8. Make the Ganache while waiting for the shells to cool. Using a small saucepan, bring the cream to a simmer and remove from the heat. Add 4oz of chopped chocolate and stir until smooth.
  9. Fill each tart shell with Ganache and sprinkle with sea salt flakes. Refrigerate and enjoy!
