Lavender Chocolate Lava Cakes


INGREDIENTS
Serves 6
  • 2 eggs
  • 2 egg yolks
  • 1/3 cup sugar
  • 2 tbsp flour
  • 1 tsp vanilla
  • 1 pinch of salt
  • 6 oz dark chocolate, chopped
  • 1 stick unsalted butter
  • 3 tbsp fresh lavender flowers
  • powdered sugar for garnish
  • lavender seeds for garnish


PREPARATION
  1. Mix eggs and sugar until fluffy in mixer.
  2. Add flour and vanilla and mix.
  3. Melt butter, lavender and chocolate in double boiler until fully incorporated. Strain out the lavender.
  4. Gently fold the chocolate mixture into the batter with a spatula.
  5. Grease 6 ramekins, place them on a baking sheet and fill them with batter. Bake 8 to 10 minutes at 400 degrees F.
  6. Let cool for 2 minutes, run knife around cakes and invert on a plate. Finish with sifted powdered sugar and lavender seeds.
