Nectarine Blackberry Cobbler


INGREDIENTS
Serves 6 - 8
  • 5 nectarines, sliced
  • 1 cup blackberries
  • 1/4 cup all-purpose flour
  • 1 tbsp lemon juice
  • 1/3 cup granulated sugar
Cobbler Topping
  • 1 1/2 cups plus 1 tbsp all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp lemon zest
  • 6 tbsp unsalted butter, cold, cut into pieces
  • 3/4 cup plus 2 tbsp cream
  • 1/3 cup crystallized ginger, minced
  • egg wash
  • Turbinado sugar for sprinkling


PREPARATION
  1. Preheat oven to 375 degrees F.
  2. Fruit Mixture: In a large mixing bowl combine nectarines, blackberries, flour, lemon juice and sugar.
  3. Topping: Sift flour, sugar, baking powder and salt into a large mixing bowl. Add butter pieces, cream and crystallized ginger. Mix by hand until dough starts to come together. Form 4 disks out of the dough.
  4. Spray a 9" x 9" baking dish with cooking oil. Add in the fruit mixture and place the 4 disks on top of the fruit mixture.
  5. Brush the cobbler topping with an egg wash and sprinkle with Turbinado sugar. Bake at 375 degrees F for 45 minutes or until bubbly in the middle.
  6. Serve warm with a scoop of vanilla ice cream.
