Rustic Cornmeal Apple Pie


INGREDIENTS
Serves 4 to 6
Crust
  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup cornmeal
  • 1/4 tsp salt
  • 3/4 cups cold butter
  • 1/3 cup low-fat buttermilk
Egg Wash
  • 1 tbsp milk
  • 1 large egg white
Filling
  • 4 Granny Smith apples, peeled and cored
  • 1 tbsp lemon juice
  • 1/2 cup granulated sugar
  • 2 tsp ginger powder
  • 3 tbsp all-purpose flour
Topping
  • 1 1/2 tbsp turbinado sugar


PREPARATION
Crust
  1. In a food processor mix dry ingrdients. Flour, sugar, cornmeal and salt.
  2. Add butter and pulse lightly 4 - 5 times
  3. Add butermilk and pulse until sticky.
  4. Refrigerate 30 minutes.
  5. On lightly floured parchment paper roll out dough into a circle. Leave edges.
Filling
  1. Dice apples.
  2. Mix lemon juice, sugar, ginger powder, flour and apples. Toss to coat.
Assemble
  • Layer filling in center of pie crust and turn up sides.
  • Brush with egg wash and sprinkle with sugar.
  • Place on baking sheet and bake at 350 degrees F for 45 to 55 minutes.
