Sous Vide Perfect Steak

Serves 2
  • 2 New York strip steaks, 1 1/2 in. thick, 6 - 8 oz.
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tsp clarified butter
  • flaky sea salt and black pepper for serving

  1. Fill a large container with approximately 6 litres of water. Attach sous vide immersion circulator to the container and set the temperature to 135 degrees F.
  2. Season steaks on both sides with kosher salt and black pepper, then place them in seperate plastic bags. When the water has heated to 135 degrees F, place steaks in plastic container and cook for 1 hour and 40 minutes. Remove steaks from water and the bags.
  3. Heat a cast-iron skillet over medium high heat. When the skillet is hot add butter. Once the butter begins to bubble, add your steaks to the pan and sear on each side for 2 minutes. This will cook your steaks to a medium rare 135 degrees F.
  4. Let sit for 5 minutes. Sprinkle with flaky sea salt and freshly ground black pepper to taste.
