Fennel, Melon and Ham Salad


INGREDIENTS
Serves 6
  • 1 medium fennel bulb, thinly shaved
  • 1/2 pint cherry tomatoes, halved
  • 1/2 cantaloupe, cut into 6 wedges
  • 6 thin slices serrano ham
  • 2 cups microgreens
  • 2 tbsp sherry vinegar
  • 6 tbsp extra virgin olive oil
  • salt and pepper
UTENSILS


PREPARATION
  1. Place microgreens on your serving platter as a base for the salad.
  2. Add fennel and tomatoes.
  3. Drizzle with vinegar, olive oil, salt and pepper.
  4. Toss only right before serving.
