Heirloom Tomato Tart


INGREDIENTS
Serves 6 - 8
  • 3 medium heirloom tomatoes
  • 6 cherry tomatoes, halved with stem on
  • 1/2 cup mascarpone
  • 1/2 cup chevre
  • 1 egg, lightly beaten
  • 1 1/2 tbsp olive oil
  • 1 tsp thyme, chopped and sprigs for garnish
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/8 cup chives, rough chop
  • 1 pre-made pie dough
  • egg wash
  • fine cornmeal, for dusting
  • olive oil (for garnish)


PREPARATION
  1. Preheat oven to 375 degrees F. Roll out dough on a surface dusted with cornmeal. Place dough in a greased 8" tart pan and perforate with a fork. Spread a light egg wash over the dough and pre-bake in the oven for 12 - 15 minutes
  2. Meanwhile, combine cheeses, eggs, herbs, seasoning and mix.
  3. Remove tart shell from oven and spread the cheese mixture into tart pan. Add sliced tomatoes in a circular design to create an ombre effect. Place thyme sprigs and chives on top and bake for anther 15 - 20 minutes until the cheese mixture has set.
  4. Garnish with olive oil, chives, salt and ground pepper.
