Potatoes au Gratin


INGREDIENTS
Serves 6
  • 2 1/2 lbs Yukon Gold Potatoes
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp garlic
  • 2 - 3 shallots
  • 1 tbsp flour
  • 1 cup milk
  • 1/4 cup white wine
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup Gruyere
  • 1/4 cup Parmesan, finely grated


PREPARATION
  1. Use a food processor to mince shallots, thinly slice potatoes and shred Gruyere cheese.
  2. Place a saucepan on medium heat and saute butter, shallots and garlic until translucent. Add flour and mix thouroughly.
  3. Deglaze shallot mixture by adding wine and milk to saucepan. Reduce heat to low. Once sauce has thickened, add Gruyere, then add salt and pepper.
  4. Pour sauce into a baking dish and layer potatoes on top in a circular formation. Sprinkle  Parmesan on potatoes, drizzle on olive oil and bake at 400 degrees F for 45 minutes. Finish by broiling for 10 minutes on high.
  5. Garnish with fresh sprigs of rosemary.
