Tomato & Sprouts Salad


INGREDIENTS
Serves 4
  • 2 tbsp olive oil, divided
  • 3 garlic cloves, sliced
  • 3 tbsp hazelnut oil
  • 1 tsp flaked sea salt
  • 1/2 tsp fresh cracked pepper
  • 1 - 2 cups spicy sprouts
  • 3 large heirloom tomatoes
  • 1/4 cup sweet yellow onion, thinly sliced
  • 1 tbsp feta
  • 3 tbsp chervil, chopped
  • 1/4 cup pine nuts, toasted
UTENSILS


PREPARATION
  1. Warm a saute pan on medium heat. Add 1 tbsp olive oil and sliced garlic. Saute until golden brown, 1 - 2 minutes.
  2. Make the salad dressing by whisking together the remaining olive oil, hazelnut oil, lemon juice, salt and pepper.
  3. Assemble the salad. Place the sprouts on a plate and layer on sliced tomatoes. Sprinkle onions, chervil, pine nuts, feta and garlic chips.
  4. Drizzle with dressing and serve.
