Turkey (Pan) Gravy

  • Turkey drippings from a 10lb turkey
  • 1 tbsp garlic, minced
  • 1/4 cup wine
  • 1/4 cup flour
  • 2 cups poultry stock
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  1. Remove turkey from roasting pan. Place pan on burner and set heat to medium.
  2. As the drippings begin to reduce add garlic. When garlic is fragrant add flour and whisk vigorously.
  3. Add wine and reduce for a few more minutes before adding poultry stock.
  4. Simmer until you see the gravy has thickened. Mix in seasoning and adjust to taste.
