Bob's Chili Con Carne


SIMPLE CHILI CON CARNE

INGREDIENTS
Serves 6 to 8
  • 2 tbsp vegetable oil
  • 2 1/2 lb lean ground beef
  • 2 large yellow onions, chopped
  • 2 cloves garlic, crushed
  • 2 tablespoon chili powder
  • 2 tbsp beef boullion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cans (19 oz) red kidney beans, drained
  • 2 cans (28oz) diced tomatoes
  • tobasco sauce (optional, for heat!)
  • 1 green bell pepper, chopped (optional)
  • cooked rice for serving
  • shredded cheddar cheese, for garnish
  • sour cream, for garnish


PREPARATION
  1. Grease a large sauce pan or stock pot with vegetable oil. Heat on stove to medium - high.
  2. Add onions and garlic and saute for 2 to 3 minutes.
  3. Add ground beef, reduce heat to medium and cook until browned, about 8 to 10 minutes. Gently stir constantly.
  4. After meat is browned, strain off excess liquid fat and oil. Either use a strainer or just use a large spoon to remove.
  5. After fat and oil have been removed, return meat to sauce pan and  add diced tomatoes, beef boullion, chili powder, salt, pepper and a dash of tobasco sauce.
  6. When combined ingredients begin to boil, cover pan and reduce heat to low and simmer for 1 hour. After simmering for 1 hour, if liquid in the mixture has not reduced enough to your liking, turn heat back up to mjedium and cook an additional 10 or 15 minutes with the lid off.
  7. After simmering for 1 hour, add kidney beans and return heat to medium high. When combined ingredients begin to boil, cover pan and reduce heat to low and simmer for an additional 30 minutes
  8. Optional: After simmering the kidney beans, add chopped green bell pepper, to "freshen" the taste, and cook for an additional 3 minutes.
  9. Serve over cooked rice.
  10.  Garnish with shredded cheddar cheese and sour cream.
